This is the Hungarian ratatouille, its perfect as a light summer dinner.
Ingredients (for 2):
- 1 onion
- 2 Hungarian peppers
- 1 tomato
- sunflower oil
- Hungarian kolbász (sausage) or sliced bacon
- 1 hot pepper (optional)
- 4 small eggs
What I used in the States:
- canola oil
- chorizo sausage
- Italian peppers (these looked the most similar to Hungarian peppers)
- 3 jumbo eggs
The process:
- chop the ingredients
- sautée the onions on 2 tablespoons of canola oil
- add the chorizo (or sliced bacon) and wait until the fat melts out of it and covers the onions
- add the peppers and cook for about 15 minutes, until they are soft
- add the tomatoes and cook for about 10 minutes, until the pieces are gone and gave a nice juice to the mixture
- add the beat eggs and stir until cooked
