This is the Hungarian ratatouille, its perfect as a light summer dinner.

Ingredients (for 2):

  • 1 onion
  • 2 Hungarian peppersMagyar zöldpaprika 2sm
  • 1 tomato
  • sunflower oil
  • Hungarian kolbász (sausage) or sliced bacon
  • 1 hot pepper (optional)
  • 4 small eggs

What I used in the States:

  • canola oil
  • chorizo sausage
  • Italian peppers (these looked the most similar to Hungarian peppers)
  • 3 jumbo eggs

The process:

  • chop the ingredients

  • sautée the onions on 2 tablespoons of canola oil

  • add the chorizo (or sliced bacon) and wait until the fat melts out of it and covers the onions

  • add the peppers and cook for about 15 minutes, until they are soft

  • add the tomatoes and cook for about 10 minutes, until the pieces are gone and gave a nice juice to the mixture

  • add the beat eggs and stir until cooked
